Wow! The cake is gorgeous and my mouth is watering just looking at it. Watermelon is about to come into season here – happens right around the 4th of July and I am looking forward to it.

Do you have a no egg mayo recipe that you like/ I’m still working on one and not satisfied yet. Last one I made with coconut milk as an emulsifier.
Becky, I decided not to try one. If I can’t make something easily that resembles the original, I just scrap it. It saves me a lot of grief. 🙂 I now use avocado ‘cream’ to replace mayo, and it adds a wonderful flavor. Avocado cream: Add avocado with olive oil (1 Tablespoon?) and salt to taste in a bowl. Smash it well with a fork or put it in a small food processor (I have one for baby food). It is fantastic mixed with tuna, capers, and lacto-fermented sauerkraut in lettuce wraps. Good luck with your mayo recipe!
