  1. I made a meat broth based on your advice but I can’t get it to look like a gelatin like your pics. I make meat broth a lot but can never get it to look like yours. It’s so frustrating 🙁 I wonder what I’m doing wrong.

    1. Don’t worry Kristine! Even if you aren’t getting a hard gel, you are still getting all the gelatin if you eat the meat from the broth. There are a lot of factors that will determine if you stock will gel including the source of your meat and the meat to water ratio.

  2. Hi Jennifer,
    What do people do that have Mast Cell Activation Syndrome and need to heal their mucosal lining?
    I get super sick (migraines and vomiting) from bone broth. It’s way too high in glutamates. I made the meat stock recipe and I only slow cooked it for 1hr 40 min on the range after having roasted the chicken in oven beforehand. Do you have any solutions?
    Should I try slow cooking the chicken for less time and see if that helps? I already take safety measures of buying local, pasture raised chicken shipped to me frozen and I thaw it and then bake it right away. Then I either freeze chicken right away to msje stock at a later time or I make stock right away.

    1. Hey Nicki! I think avoiding all high histamine foods do much better for MCAS than adding in things that can help other people heal. Bioindividuality means that we all really need an approach that honors what causes stress and There’s usually enough gelatin in muscle meats to help with repair and maintenance, and there are so many good options for mucosal support that I would personally try some other alternatives instead. Slippery elm bark, marshmallow root, and chlorella (if your body can tolerate plants) are some of my go-to remedies at home and in my practice.
